The Dairy Enterprise System is a commodity-based operational unit consisting of the Dairy Education Unit (part of the Lake Wheeler university farm system), the Dept of Food, Bioprocessing & Nutrition Sciences Dairy Processing Lab and university retail operations that are dairy product-based. The individual units have the purposes of Teaching, Research, Extension and the production of high quality dairy products to the university, state hospitals and correctional facilities meeting mandatory nutritional requirements at system-wide cost savings.

The Dairy Process Operator provides operational support for the Dairy Processing Lab including batching, processing, packaging and storage of dairy product along with cleaning and sanitation of equipment and facility. Most equipment maintenance and upkeep will be performed by the operator. All activities will support production of a safe, consumable product ensuring the highest quality possible by complying with all local, State and Federal rules and regulations on a continuous basis.

The Dairy Operator position includes responsibilities such as operating advanced equipment within the Dairy Processing Lab as well as other pilot plant laboratories within the FBNS Department. Quality duties such as microbiological testing, butterfat analysis and titratable acidity may be included within the Operator workload. The Dairy Process Operator should be a leader within the workforce and make leadership decisions during the daily performance of duties within the dairy production environment. This position should be capable of independent work with no supervision and provide direction to subordinate employees. The Dairy Process Operator position maybe assigned the responsibility of evaluation, acceptance, transportation and receipt of raw farm milk to the dairy processing operation. Multiple critical quality functions must be performed by the operator.

The position may be directed to perform route sales/delivery requirements during significant manpower shortages. Delivery of product entails being the main, in-front-of-customer representative of the DES system and requires professionalism at all times.
