Position Summary/Purpose of Position:

The Director of Dining Services provides overall direction, leadership, management, and strategic vision to a department responsible for a comprehensive University food service program. The Director is responsible for administering a $80M budget that encompasses major programmatic areas in 32 locations on campus including:
  • Delivery of the student meal plan to an on-campus, undergraduate population in excess of 10,000 students. 
  • Comprehensive catering program. 
  • Athletic concessions at all major athletic venues and training table. 
  • Stamp Student Union food service including branded eateries and restaurant, Catering .
  • Mulligan’s restaurant and snack bar at the University Golf course. 
  • Three convenience stores/markets. 
  • Cafes in academic buildings. In addition, the Department of Dining Services oversees a Facilities Management, Human Resources, Communications, Sustainability and Business and Information Technology Units, as well as central commissary, bakery and laundry.

The Director serves, along with sixteen other department heads, as a member of the Vice President for Student Affairs divisional leadership team and confers with his/her as necessary on policy and procedural issues and program development priorities

Minimum Qualifications:

Education:
A Bachelor’s degree in Hospitality Management, Business or a related field.

Experience:
Minimum of twelve years management experience in complex multi-unit and multi-concept food service operations, at least 5 of which were in a senior leadership position.

Knowledge, Skills, & Abilities:
Demonstrated leadership skills with a record of administrative achievements over several years.

Preferences:

Preferences:
  • Comprehensive knowledge of the management principles of the operation of a large institutional department, preferably in a public university. 
  • Outstanding verbal and written communication skills. 
  • Ability to lead, develop, and motivate a diverse unionized workforce and accomplish a variety of tasks at multiple locations. Expert organizational and logistic skills. 
  • Working knowledge of high production food service operations and the principles of food safety. Extensive knowledge and understanding of the food service market and proven ability to forecast food service trends. 
  • Outstanding knowledge and skill in presenting objectives and building consensus. 
  • Working knowledge of food service facility design, POS systems, computerized financial and food production system, HACCP, human resource management, catering sales and service, athletic concessions, franchise operation and restaurant marketing. 
  • World class guest service skills. Demonstrated commitment to Diversity, Equity, Inclusion, and Justice, Sustainability and change management.

Physical Demands

Must report to work when the University is closed due to weather or other emergency conditions that may create risks.

This is an essential position and incumbent must report to work when the campus is closed due to weather or other emergency situations. Must be able to work a variable schedule including weekends, nights, evenings, and holidays. Annual leave will not be granted for specific periods including the weeks preceding and right after the start of each semester, Football Weekends, Maryland Day, Family Weekend or special events. Must have the manual dexterity to operate equipment with or without accommodation and to lift up to 15 pounds occasionally. The University of Maryland is a non-smoking campus.
