Description of Work
The postdoctoral research associate will contribute to the integrated research land-grant mission of the Department of Food Science and Technology and the Institute of Agriculture and Natural Resources (IANR), as an effective scholar and citizen, including supporting student recruitment and IANR science literacy.
The postdoctoral research associate will join a multidisciplinary collaboration to explore and harness the vast diversity of dietary proteins and peptides to understand their role in modulating biological functions and develop peptide-based functional foods or nutraceuticals for mitigating the global prevalence of chronic diseases and malnutrition. The individual will be involved in an industry-sponsored interdisciplinary project (food science, meat science, and food engineering) to:
  • Add to the development of a sustainable process to upcycle animal protein byproducts.
  • Identify and characterize the role of hydroxyproline peptides and iso-peptides in modulating bioavailability through in-vitro studies.

  • In addition to connecting with industry partners, the postdoctoral research associate is expected to publish in high-quality, high-impact, peer-reviewed journals and participate in internationally themed scientific conferences, meetings, or trade shows to disseminate results and analysis from their research.
    In addition to the above-described duties, the individual will be expected to accept committee assignments, reporting responsibilities, and other special ad hoc assignments as requested at the administrative unit, college/division, institute, and/or university level.

    Minimum Required Qualifications
    • Ph.D. in Food Science, Biochemistry, Chemistry, Biotechnology, Microbiology, or a closely related field.
    • Expertise in protein purification, mass spectrometry, mammalian cell culture, and related molecular biology techniques.
    • Knowledge of structural bioinformatics, molecular docking, simulation, and applied statistics.
    • Highly motivated and capable of independent work in a collaborative environment.
    • Strong oral and written communication skills.
    Preferred Qualifications
    • Experience in nutrient absorption study via in-vitro cells, organoids, or in-vivo models and peptide characterization via mass spectrometry.
    • Basic knowledge in peptide biochemistry, especially peptides with hydroxyproline and iso-peptides.
