Summary of Job Duties:

The Department of Food Science at the University of Arkansas is seeking a Postdoctoral Research Associate to work in the Novel Ingredient Processing and Utilization Lab. The lab is a part of the UA rice processing program (UARPP) and is well-equipped with various processing technologies (e.g., ultrasound, cold plasma, and 3D printer,) and analytical facilities. UARPP has the facilities and equipment for drying and milling (novel and conventional), physicochemical analysis, sensory evaluation, and nutritional evaluation of rice and rice products. The research areas are primarily focused on: (1) processing and post-processing modifications of plant-based ingredients, (2) clean-label and shelf-stable alternative dairy and meat product processing, and (3) valorization of grain by-products and utilization in biodegradable packaging.
The initial appointment is for 12 months and can be renewed based on satisfactory performance and availability of funds.

Qualifications:

Ph.D. research on plant-based ingredients (protein/starch/non-starch polysaccharides) will be given preferences. Experience/interest in food processing including novel processing techniques (ultrasound, cold plasma), extrusion, and fermentation is desired. Some experience in statistical analysis, process modeling, writing of manuscripts and technical reports, and grantsmanship. The candidate is expected to have good communication and technical writing skills.  Project management skills are preferred.
