General Description of the Position

THIS POSITION IS 100% GRANT FUNDED

The Food Science and Biotechnology program at Delaware State University is seeking a highly motivated and enthusiastic Postdoctoral Fellow with expertise in Food and Nutritional Sciences, and/or Natural Product Chemistry, to support the PI in executing USDA-NIFA Award (No. 2022-38821-37296).

The successful candidate will coordinate with the PI to develop robust nutritional science research in key benefit areas of healthy eating and diabetes and how diet-responsive health issues can be altered by diet. The candidate will liaise with community-based organizations in sample collection, proximate analysis, compilation, and synthesis of data (including from surveys). The candidate is also expected to have a respectable knowledge of developing and optimizing extraction and/or biotransformation, identification, quantification, proximate and nutrient analysis of food samples, sensory evaluation, analytical and regulatory validation, process optimization, product scale-up, and commercialization of bioactive compounds (flavonoids, polyphenols, and others) in foods, medicinal plant extracts, and commercial edible oilseed processing utilizing advanced analytical tools including UPLC-MS/HPLC/GC-MS/NMR. The candidate will be responsible for preparing technical reports, data summaries, presentations, protocols, manuscripts, and other technical and regulatory documents.

Essential Functions & Required Knowledge, Skills and Abilities

The following are the functions essential to performing this job:

1. Developing and optimizing extraction and/or biotransformation.
2. Extraction, identification, and quantification of bioactive compounds (flavonoids, polyphenols, and others) in food and medicinal plant extracts.
3. Perform proximate and nutrient analysis of food samples.
4. Perform sensory evaluation of food samples.
5. Process edible oil from oilseed utilizing advanced analytical tools.

The individual in this job must possess these skills and abilities or be able to explain and demonstrate that they can perform the essential functions of the job, with or without reasonable accommodation using some other combination of skills and abilities:

1. Candidates must hold a Ph.D. degree in Food Science or Nutritional Science or a related field. A successful candidate must also possess excellent interpersonal and communication skills, and be able to work with students, community partners, and stakeholders.

2. The candidate is expected to have a good knowledge of developing and optimizing extraction and/or biotransformation, identification, quantification, sensory evaluation, analytical and regulatory validation, process optimization, product scale-up, and commercialization of bioactive compounds (flavonoids, polyphenols, and others) in foods, medicinal plant extracts, and commercial edible oilseed processing utilizing advanced analytical tools including UPLC-MS/HPLC/GC-MS/NMR. Evidence of scholarly work/publications is desirable.

Qualification Standards

Education: Candidates must hold a Ph.D. degree in Food Science or Nutritional Science or a related field. A successful candidate must possess excellent communication skills, and be able to work with diverse students, faculty, and families. Evidence of scholarly work/publications is desirable.
